The Skinny on the Ultimate Reset – Day 11

I am over half way through the Ultimate Reset!!!!!!

You won’t believe something I’ve decided since about day 7…..drinking coffee MIGHT be a thing of the past for me!!??!! I know. I’m like significantly known for being everything coffee. But once I got over my withdrawals I realized how much I naturally feel better without it!?!?

Aside from green tea or my unicorn blood — I am also going to stay away from anything caffeinated at this point.  Ive fallen in love with Teeccino though!!

I’ve also resolved for the next 6 months I’m going to plan out in FULL DETAIL & PREP allllll of my meals eating at least 3-5 vegan meals each week.

You never think it’s possible but ITS TOTALLY POSSIBLE for you too!! The first 5 days were hairy I won’t lie.  Not because of what I could or could not eat, but the feelings associated to not eating my emotions, the actual aches from detoxing, lack of energy while my body was releasing years of toxins and the pains of change.

Overall the food is good minus a few choices like seaweed, tempeh, and mashed garbanzo beans….I am full and not hungry throughout most of the day (as long as I go to bed between 9-10 when I start dreaming about what’s in he kitchen I could nibble.)

So Day 11 was the first day I was tip top shape for the entire day!  Feeling full of energy and life, clear thinking and patient!

My breakfast is pretty much the same for the next 2 weeks! They give you other options such as Miso soup, avocado and mashed chick peas but like I said….. not my ideal breakfast! Fresh fruit will do me just fine!!!  I am in a routine of making myself one and the boys love it too! I read today that fruit in the morning is cleansing and easy to digest for the body!

Tomorrow I need to get to the store for distilled water and more fruit.

Here’s the Skinny on Day  11:

Wake up w/20 oz of distilled water (Mineralize added) and continue drinking this ALL day just not until 30 mins after a meal for digestion purposes!

Take Supplements (Optimize & Detox)

Wait 30 Minutes

Breakfast (fruit bowl above) Try to pick low glycemic and in season organic fruit

Wait at least 2 hours. (I waited 3)

Take Supplements again

Wait 30 min


I don’t know that it’s allowed but I usually end up combining whatever mix of food combos they have set up. For instance today was cucumber tomato salad, 1 cup quinoa, and 1/4 avocado…so I just mixed it all in. It looks messy but tasted really great! Instead of the dressing listed (that was mostly the same ingredients as the greek dressing — I just used what I already had made of that) but here’s the recipe:

Cucumber & Tomato Salad courtesy of the Ultimate Reset

(Makes 1 Serving)

2 Tbsp. red wine vinegar

1 tsp. balsamic vinegar

1 Tbsp. lemon juice

2 tsp. extra-virgin olive oil

1 medium cucumber, partially peeled, cut lengthwise then sliced

1 cup cherry tomatoes, halved

1 Tbsp. red onion, chopped

2 Tbsp fresh herbs (I used parsley & basil), chopped

Himalayan salt to taste (optional)

Herbal seasoning (optional)

Combine red wine & balsamic vinegars, lemon juice, and oil in a small bowl, mix well. Set aside. Combine cucumber, tomatoes, onion, parsley, basil, salt, and seasoning in a large bowl, mix well. Drizzle dressing over cucumber mixture; toss gently.

Wait at least 2 hours (I waited 3)

Take your power greens

Wait 30 minutes

Optional Snack – I had vanilla vegan Shako

Wait 2 hours

Take Supplements (Optimize, Detox & Soothe)

Wait 30 min


Hearty Miso Soup

Hearty Vegetable Miso Soup

makes 1 serving


• 1 t. extra virgin olive oil or safflower oil

• 2 T. finely chopped yellow onion

• 1 t. finely chopped garlic

• 1 small carrot, cut in thin diagonal slices

• 1 small celery stalk, cut in thin diagonal slices

• ½ t. peeled and finely grated ginger (I omitted – I hate ginger like a lot)

• 2 C. water

• ¼ C. broccoli florets

• 2 T. chopped fresh green beans (I only had asparagus)

• ¼ C. shredded Napa cabbage or bok choy

• 1 T. wakame seaweed (optional…It makes me hate life so I don’t add this either haha)

• ¼ t. sesame oil

• 1 T. sliced green onion

• 1 T. miso paste mixed with 2 T. hot water (also optional)


1. Heat EVOO in soup pot on medium heat.

2. Add onion, garlic, ginger, carrot, and celery and saute for 5 minutes.

3. Add water and simmer on low for 20 minutes until veggies are tender.

4. Add broccoli, beans, cabbage, and seaweed.

5. Stir and simmer until tender but not overcooked; broccoli and beans should remain crisp.

6. Remove from heat and add sesame oil, green onion, and miso mixture.

1/4 cup quinoa & lemon greens (greens sautéed in extra virgin olive oil & squeeze of lemon)

Finished off the night with chocolate Teeccino in place of coffee or a cheat and I have to say it makes giving up coffee for good a breeze!!

The Skinny on the Ultimate Reset – Day 8

In any given moment we have ✌🏼options.

1. We can take a step forward into growth

2. Retreat and step back into safety.

Gut reaction is to to resist. Change is uncomfortaballs!!! You can try to play cool and like you have it together but inside you’re in a constant state of QUIT & RUN!! Grasping at straws to keep it all together or to blow it all off.

My journey has been FILLED with blowing it off. I could list a laundry list of reasons and place blame! 3 pregnancies and getting older for my weight gain… bad genetics or our lack of money just to name a few.

Instead I refused to give up and started taking matters into my own hands. 💯💯

Everyday I whether I SLAY THE DAY OR FAIL FORWARD I know I’m doing what I can to be the best version of ME!

As much as we don’t like to switch things up! Sometimes it is what is best for us!!

Over the past 4 years I have:

1. Done Insanity, P90X3, Turbofire, T25, PiYo, Insanity Max30, 21 Day Fix and fix Extreme, Country Heat, Hammer && Chisel, Core de force, 22 Minute Hard Corps, Shift Shop.

2. I have eaten clean, followed portion fix, followed countdown to competition, 3 Day Refresh, and TREAT YO’SELF😭😂. ⁉️ Each program taught me something I didn’t know about myself and helped me level up to the next phase of my fitness. Whether it was leaning out, building muscle, overcoming eating disorders, pushing through breaking points, or just learning to create consistency.

During this process what has always remained the same is– food is fuel– create a lifestyle — take care of yourself!! Which brings on the BIGGEST NUTRITIONAL CHALLENGE YET!! 21 days of TIMED && PRECISE meals, nutrition and detox supplements, and yoga.

I have never been more ready for this program. Everything that I have done with Beachbody has helped me grow into the girl that could commit to something like this and already 7 days in I am so much better for it!!

ANOTHER Microgreen Salad with Homemade dressing

Salad consisted of:

A boat load of spring mix

1/4 C carrot

1/4 C cucumber

1/4 C red bell pepper

1/4 C sprouts

1/4 C tomatoes

1/4 C chopped jicama

1/3 C pumpkin seeds

Basic Vinaigrette

‎1/2 Cup Extra Virgin Olive Oil

1/4 Cup Red Wine Vinegar

1 tsp salt Himalayan Salt

1 tsp raw honey

2 Tbsp Fresh Lemon Juice

2 tsp chopped fresh herbs (I used basil & parsley)

Wait at least 2 hours (I waited 3)

Take your power greens

Wait 30 minutes

Optional Snack (I had my Shako & power greens mixed together)

Wait 2 hours

Take Supplements (Optimize, Detox & Soothe)

Wait 30 min

I felt REALLY hungry all day yesterday and mostly won the battle. I licked a tortilla chip while Madi made a pile of nachos and I chewed a bite of freaking delicious lasagna then spit it out 😭😂

I have this burning desire to constantly GROW so I’ve made it a habit to spend at least 30 minutes a day in gratitude and soaking up a good audio book before I start working out to get myself in the right mindset to take on the day!
Many people simply let life HAPPEN to them and REACT IN DEFENSE… Instead make a clear plan on where you want to go, develop new habits & take ACTION to grow into the person you need to become in order to live the life you desire! .
Become the STAR QUARTERBACK of your life and throw yourself in the direction of your dreams by establishing a game plan to get you to the end zone! Even if life happens & blocks you or even tackles you and you lose ground… Good habits, a clear vision and a fierce determination will cause you to get back up, learn from your misstep and get back to the game!‪#‎yousototallyGOTthis‬

A little under 2.5 years ago I was introduced to a opportunity that would literally change the course of my life.

Don’t get me wrong I had an amazing employer at a local high end family restaurant working with fun and new people all the time. It was extremely fulfilling helping my guests enjoy their experience. I was able to make my own schedule and earn a significant income. But, just like most moms out there I was losing out on TIME with my own children and longed to be able to be home with them.

Not knowing exactly what I stumbled upon I slowly worked my business in between school pick ups and drop offs, during sports practices, and after my little ones rested their heads in the evening.

Before I realized it I started to generate a real income. {enough for my boyfriend to take notice } I continued to be efficient with the little time I had for me and was able to grow my business to REPLACE MY CURRENT MONTHLY INCOME as a server. Along with that I realized my DREAM of retiring from the serving life to be with those that are most important to me…. My FAMILY.

Run Faster Eat Better Try Harder Be Happier

Start today. Depending on where you are in your journey that might mean committing to a routine or program, deciding to get off the couch and go for a run, preparing a week of clean meals so that you aren’t caught making bad decisions when hunger strikes, whatever it is. Don’t talk yourself out of it this time. It’s scary to feel like you have to do something uncomfortable. But GET COMFORTABLE WITH BEING UNCOMFORTABLE!!! Once you push past it a few times you will be AMAZED at the mental rewards.
It wasn’t that long ago I was feel depressed. Defeated. Not sure what in the world to do with myself so I just wanted to sleep. Sleep away the lonely, sleep away the sad. Not one to take pills for things I can control on my own I made the decision to get in shape, eat better, and dedicate my life to sharing that with as many people as I possibly can. In 2 years time I’m happier than I’ve ever been and my own goals to succeed have created a life I used to only dream about.
Your mind is your greatest asset if you can control it. This is usually our weakest link of the whole equation. So many people think your body is what needs to be strong to push through a tough workout but truthfully it’s your mind. Most of our fears and doubts and failures result from our mind giving up or sabotaging our efforts. When you can’t go any further convince yourself to do 5 more. Break through that plateau. Same thing with your business, coaches…if you are too worn out to do something or at the end of the day you still have stuff on your to do list- rock it out for 10 more minutes. Go a little bit further than you can go. It’s in those moments…our weakest moments where we become truly great!
So proud of myself…Crushed my workout today- tabata strength…day 2 of week 1 of insanity max 30 is in the books. My arms feel like jello and there were many moments I couldn’t do anymore but I pressed through. Even if I couldn’t do another push up I would hold up in plank until I could do one more.

Feeling stronger. Feeling good. Who else worked out this morning?! ‪#‎behappier‬
