The Skinny on the Ultimate Reset – Day 17

Wow!? Who am I!? It’s been sooooo Hard for me to get up before starting this detox and here I am bouncing out of bed before my alarm. No blurry eyed creep to the kitchen to fire up my tea cup and I’m diving into paint projects before I wake the boys up from school!?!?! What in the heck!?!

I had no idea sleeping soundly would be such an amazing benefit to this 21 days and honestly might make even my worst food day worth it!! As a mom we never expect to get a good nights sleep because even if the kids don’t wake us up we still listen for every noise, whisper, thud, and breath. But I am KNOCKED OUT at night and ready to wake up when or before my alarm goes off. There is so much beauty in waking up refreshed I had no clue what I was missing!!!

Here’s the Skinny on Day 17:

Wake up w/20 oz of distilled water (Mineralize added) and continue drinking this ALL day just not until 30 mins after a meal for digestion purposes!

Lunch – called for Morracan Carrot Salad with 3 cups of greens (not pictured – still steaming) and it just wasn’t in me to make it so I roasted some asparagus and steamed the carrots it called for and called it good. I’m usually great at meal prep but this final leg of the cleanse I’m not super excited about it.

Optional Snack – I used my oil allowance from lunch to mix up this beauty. 1 Tbsp of coconut oil and 1 Tbsp of Shako vegan chocolate then 5 mins in the freezer and this was worth it!!!

Dinner – again. Food fail because I just wasn’t into what was called for so I made a 1/2 sweet potato with mixed veggies (zucchini, broccoli, red pepper, and asparagus)

I think what’s awesome about this plan is how easily you just revert to fruits or veggies with no desire to cheat. I could have easily eaten the steak the kids were eating but other than it smelling good I had no desire to eat it.

The Skinny on the Ultimate Reset – Day 16

Wanna get a kick in your step without the superpowers of caffeine? I’m learning a lot during this 21 days and had NO IDEA I could live without something as sacred as coffee but here I am day 16 no caffeine!! 🤯 I add 1 Tbsp. in 4 ounces of distilled water with a squeeze of lemon and a pinch of pink Himalayan salt first thing in the morning. SOOO great for energy! + it’s said that it can help with weight loss (increases metabolism) and tons of other shit like balancing your bodies PH. The Skinny on the Ultimate Reset – Day 13

Phew! Today I was IN THE ZONE!! To say I’ve battled every negative thought and emotion every minute of every day is an understatement. I’ve tried to have temper tantrum’s over the food only to realize it’s a breeze and I actually constantly feel full. I’ve tried to say it’s too hard to shop, prep, plan when in reality I save more time by doing so. And probably to be honest a lot more money!

I keep giving myself that moment to just break and make nachos or pick up a pizza but then I realize the number of women counting on me and the number of times I’ve quit on myself — and there’s no way I’m giving up on one of those things this time!

I thought I would be a lot more emotional at this point of the 21 days just from what I had read so far from others who’s gone through it but honestly I have no complaints, worry, emotional break out or bad feelings to speak of.

I attribute that success to plenty of Epsom salt and essential oil detox baths, as well as, resting whenever I need to! Meaning sleeping whenever I feel like it and going to bed early! 2 things I NEVER allow myself to do regularly. I have been pushing so hard this year on my goals I wasn’t recognizing that it was a detriment to my physical and emotional well being. Definitely going to remind myself when I’m feeling worn down that I need to do things daily to feed my soul and take care of me.

Slight rebellion going on. I’m not super stoked on some upcoming recipes and this zero to no carbs (from rice and grain) thing is KILLING me. I use carbs to power up my creative energy and learning to source that Out has been HARD!! That being said I didn’t eat what was called for and instead modified this to show you that if you have grace & patience with yourself you are more likely to see this to the end rather than quit!!!!

I chose butternut squash in Italian herbs, steamed broccoli &carrots, and the teensiest scoop of rice imaginable just to soothe me and remind me that I CAN do this for 8 more days!!!!

CREAMY GARLIC 🥗 DRESSING

1/2 cup extra-virgin olive oil
1/4 cup apple cider vinegar
3 cloves garlic, crushed
3 Tbsp. fresh lemon juice
2 Tbsp. chopped fresh parsley
1 tsp. Himalayan salt
1/2 tsp. Dijon mustard
1 Tbsp. raw honey (or pure maple syrup)
Place oil, vinegar, garlic, lemon juice, parsley, salt, mustard, honey in a blender until smooth. Refrigerate dressing to store. If dressing solidifies when cold, hold at room temperature for 30 minutes. Stir or shake before serving.

I meal prepped a shit ton of my food in the kitchen today LIVE ON FACEBOOK! So super proud and stoked that I pushed through how hard yesterday was for me! Quinoa recipe below and scroll to the bottom for the Zucchini Cashew Soup and Roasted Root Medley recipes!!

Lunch!!!

Quinoa Salad (makes 1 serving) – I multiplied it so the fam bam could eat it too! I’ll only eat 1/2 a cup at a time in my serving.

1/2 cup cooked quinoa

1 Tbsp Pink Himalayan Salt

1 Tbsp Extra Virgin Olive Oil

Braggs Liquid Aminos (optional)

1 Tbsp fresh lemon juice

1/2 medium tomato

1/2 medium cucumber

2 Tbsp pitted chopped kalamata olives

2 Tbsp finely chopped parsley (you could use anything, cilantro, dill, whatevs you like)

1 Tbsp finely chopped mint leaves

Combine quinoa, oil, salt, Braggs, and lemon juice in a medium bowl; mix well. Add tomato, cucumber, and olives; toss gently. Gently fold in chopped herbs. Cover and refrigerate for 2-3 hours before serving.

Raw Veggie plate

1/2 cup hummus

10 baby carrots

1-10 cherry tomatoes

10 slices red bell pepper

5 green beans

Miso Soup

Stir-fried Veggies

1/2 cup brown rice

1 serving Nori Gomasio

The other recipes I made today:

Zucchini Cashew Soup (makes 1 serving) I doubled this recipe because I eat it later in the week also

1 oz. raw cashews (about 17)

1 1/2 cups water, divided use

1 1/2 medium zucchini, cut into chunks

Himalayan salt or Braggs Liquid Aminos to taste

Herbal seasoning blend or fresh herbs (I used basil)

Soak cashews in 1/2 cup water for 1 hour. While cashews are soaking, bring remaining 1 cup water to a boil over medium heat. Add zucchini, cook 4-5 minutes, or until hot. Drain. Set aside.

Place cashews (with water), zucchini, salt, and herbs in a blender and blend until smooth. Heat soup if desired but do not boil or it can be served cold.

Roasted Root Medley (makes 1 serving) I doubled it because I eat it later in the week also)

1/4 medium yam, cut into chunks

1/2 medium carrot, cut into chunks

1/2 medium beet, cut into chunks

1/4 medium onion, cut into chunks

2 tsp olive oil

Himalayan salt to taste

Preheat oven to 400. Combine yam, carrot, beet, onion, oil, and salt; mix well. Arrange veggies on a baking sheet in a single layer. Bake for 40-50 minutes, turning once or twice (to cut down on time I microwaved the chopped veggies in a covered bowl with a teensy bit of water for 5 minutes)

The Skinny on the Ultimate Reset – Day 3

Googling “how to get through the weekend without cocktails”


Today was the first day I’ve smelled coffee since Saturday (6 days ago) and it smelled like heaven. I kept saying “one sip wouldn’t hurt” as Tom was brewing my favorite Starbucks Willow Blonde Roast blend.

And seriously contemplated how one little piece of Halloween candy couldn’t possibly hurt, right?!? Ugh haha. I made it through every possible bad decision feeling good and being at the top of my game! I’m honestly so freaking proud of myself. I don’t know where the motivation is coming from other than I’ve put my whole heart into doing this Ultimate Reset for myself. Something to help me get beyond the sabotage I do every time I start to see results. A set of meals I can come back to and remember how strong I was and how I was capable of achieving what I never thought I would. I feel like I just heard the Rocky theme song in my head.

So the here’s how Day 3 went down:

1 slice of Whole Grain Toast

2 Scrambled Eggs (cooked with 1/2 tsp Olive Oil)

Generous serving of steamed Kale or spinach

Lunch!

Bomb ass Lentil-Lime Salad

1 cup cooked green or brown lentils

1 medium carrot, shredded

1/4 cup finely chopped cilantro (I subbed italian parsley)

1 1/2 tsp sesame oil

2 Tbsp fresh lime juice (I used 2 whole limes bc I loooove lime)

Braggs liquid aminos

Himaylayn salt

1/2 tsp cumin (optional – I didn’t do it)

Herbal seasoning (also didn’t add it – I’ve noticed spices a lot more I think as my tastebuds actually get clear and I am realizing I don’t really like things like cumin or cilantro!? And the only herb seasoning I have has both LOL)

Combine it all in a bowl, mix, and cover. Marinate in the fridge for a couple hours before serving.

We ALSO ate ANOTHER Microgreen Salad with Homemade dressing

Salad consisted of:

A boat load of spring mix

1/4 C carrot

1/4 C cucumber

1/4 C red bell pepper

1/4 C sprouts

1/4 C tomatoes

1/4 C chopped jicama

1/3 C pumpkin seeds

Basic Vinaigrette

‎1/2 Cup Extra Virgin Olive Oil

1/4 Cup Red Wine Vinegar

1 tsp salt Himalayan Salt

1 tsp raw honey

2 Tbsp Fresh Lemon Juice

2 tsp chopped fresh herbs (I used basil & parsley)

K I’m getting a little tired of the same salad so I skipped the dressing and just squeezed more lime on this and a tsp of extra-virgin olive oil.

I needed a pick me up so I ran to Target and got some new lip gloss and pens. The color is to die for I love it so much! It’s color BLG15 from NYX Cosmetics

K full disclosure I messed up royally on dinner. I was supposed to make Nori rolls with Tempeh and at lunchtime when I realized my tempeh was rotten (ugh thanks Lassens) that’s when I ran to Target and was going to stop at Lassens to return the tempeh for a new package I realized I forgot the tempeh on the counter. Then I was just gonna roll the veggies and rice and I was over it. So I ate a leftover bowl of the beans and rice with corn from last night and veggie broth. I still feel good about my choice and know that there is no way I can be totally perfect. Mess ups are gonna happen and I’m just gonna roll with it with grace and patience with myself.

That’s when I remembered I haven’t been wearing my Ultimate Reset bracelet this WHOLE 3 days so I threw it on like a warrior princess.. or maybe more like a hippie idk hahaha but made it an anklet like it’s keeping me grounded to this plan. I can do hard things. And it reminded me of that.


​I was feeling SUUUUPER achy so I took a hot bath and right then I’m reading in my guide:

What’s even super odd is that I usually take blazing hot showers and baths AND on top of being cold allllll day I didn’t even make the bath that hot. Super weird, right!? I added epsom salt and 4 drops of lavender oil to my bath and it was heaven!!

Got out and chilled with my bear cub on the couch watching old movies! Charlie and the Chocolate Factory & E.T. (my ALLL time fave movie growing up I was OBSESSED with E.T. like had the dolls, blankets, buttons, notebooks, figurines, alllll of IT!)

Oh! And I had half a scoop of vegan chocolate shako to make me feel like I was part of movie night and it made my cub want his daily dose of sunshine too!! I linked them both there if you want to read up on them and see why it’s so important to me that we fuel our bodies DAILY with this stuff!!

The Skinny on the Ultimate Reset – Day 2

You guys. This doesn’t seem real and I’m not trying to create hype. But I am down 4.8 freaking pounds SINCE TUESDAY!?! Whhhaaatttt!!? K so now the real deal I have been eating and drinking like CRAP for the past month or more, right. I fell back into so super sad eating habits where I’m using food to self-medicate and it’s NOT healthy. I knew that so it’s why I started this 21 days into resetting my body and my mind.

I didn’t come into this expecting to lose a ton of weight and it’s not at all why I’m doing this but if I could see the other side of 130s I would be soooooo stoked!! 130 is my new 120 after adding on a shit ton of muscle the last 1.5 years using some of our crazy amazing programs!

This weight loss is the accumulation of detoxing the bloat and misery that comes from eating too many cheats and lets me honest just not tracking my food at all and at any moment if I felt like eating nachos I’d make a huge plate and eat them while binging on Riverdale episodes. (Oh em gee are you watching it!!? It feels so weird like it’s the comic strip behind the scenes. They should have called it Archie Exposed hahahaha)

Anywho. You guys know I divulge everything and while I was working out I just wasn’t taking care of the nutrition side of myself for the last month or so. And those old habits come back HARD when you aren’t paying attention. Food has always been a comfort to me so when I’m struggling or having emotional issues I find solace in that bag of cheezits. But just like any toxic relationship it HAD to end and I know it’s only day 2 but I feel like a freaking rockstar!!!!

My girls in our group are killing it and I’m just like why did I wait so long to do this program!! It’s like P90X for your insides!!!

I’m not even gonna lie I have not been wanting to work out lately so the fact that they only recommend light stretching or yoga was a huge bonus to me for the next three weeks!

I promise to share more than just food pics for the next 21 days but seriously LOOK at this huge bowl of oats and yogurt with blueberries. It’s one of my favorite breakfasts but I wouldn’t normally even eat this much in one sitting and I’m still staring at half the bowl like “am I gonna try to eat that!?” #somuchfood And I loved loved loved dinner!

Here’s the day 2 detox breakdown:

It called for them as two separate dishes but I love yogurt in my oats so I put it all together. And the thought of just plain yogurt with a tsp of syrup didn’t sound good. It called for a pinch of stevia if you wanted.

It called for a greek salad with chicken & greek dressing but I had already prepped a few microgreen salads with the basic vinaigrette and I had salmon leftover so I put it all together for lunch.

Microgreen Salad with Homemade dressing

Salad consisted of:

A boat load of spring mix

1/4 C carrot

1/4 C cucumber

1/4 C red bell pepper

1/4 C sprouts

1/4 C tomatoes

1/4 C chopped jicama

1/3 C pine nuts

Basic Vinaigrette

Shako!! My favorite shake is not part of the plan until week 3 but honestly it helps me get through the day and with all this damn Halloween candy around I HAD to have my shake!! I intend to keep it in the plan everyday if at least 1/2 scoop worth.

This was freaking bomb! I didn’t even miss having the meat! Which I still can’t believe!

Southwest Veggie Taco

1/2 cup black beans

1/2 tsp. extra virgin olive oil

1 dash ground chili powder

1 pinch ground cumin

1/4 tsp ground coriander

1 tsp Bragg Liquid Aminos

Himalayan salt to taste

3/4 cup brown rice

1/4 medium avocado

1/4 cup cooked corn kernels

1 (6-inch) corn tortilla

2 Tbsp pico de gallo

Combine mix and assemble into your tortilla and top with avocado and pico de gallo.

Sooooo delicious and even my kids liked it!!

It says to rest when you feel like you need to so I took an Epsom salt/essential oils bath then napped for a couple hours today. I intended to do the yoga portion of my workout but honestly just kinda stretched on my mat. Which is totally allowed. I just finished up shark week and feel extra tired so I’m just listenting to my body and doing what feels good.
