The Skinny on the Ultimate Reset – Day 11

I am over half way through the Ultimate Reset!!!!!!

You won’t believe something I’ve decided since about day 7…..drinking coffee MIGHT be a thing of the past for me!!??!! I know. I’m like significantly known for being everything coffee. But once I got over my withdrawals I realized how much I naturally feel better without it!?!?

Aside from green tea or my unicorn blood — I am also going to stay away from anything caffeinated at this point.  Ive fallen in love with Teeccino though!!

I’ve also resolved for the next 6 months I’m going to plan out in FULL DETAIL & PREP allllll of my meals eating at least 3-5 vegan meals each week.

You never think it’s possible but ITS TOTALLY POSSIBLE for you too!! The first 5 days were hairy I won’t lie.  Not because of what I could or could not eat, but the feelings associated to not eating my emotions, the actual aches from detoxing, lack of energy while my body was releasing years of toxins and the pains of change.

Overall the food is good minus a few choices like seaweed, tempeh, and mashed garbanzo beans….I am full and not hungry throughout most of the day (as long as I go to bed between 9-10 when I start dreaming about what’s in he kitchen I could nibble.)

So Day 11 was the first day I was tip top shape for the entire day!  Feeling full of energy and life, clear thinking and patient!

My breakfast is pretty much the same for the next 2 weeks! They give you other options such as Miso soup, avocado and mashed chick peas but like I said….. not my ideal breakfast! Fresh fruit will do me just fine!!!  I am in a routine of making myself one and the boys love it too! I read today that fruit in the morning is cleansing and easy to digest for the body!

Tomorrow I need to get to the store for distilled water and more fruit.

Here’s the Skinny on Day  11:

Wake up w/20 oz of distilled water (Mineralize added) and continue drinking this ALL day just not until 30 mins after a meal for digestion purposes!

Take Supplements (Optimize & Detox)

Breakfast (fruit bowl above) Try to pick low glycemic and in season organic fruit

I don’t know that it’s allowed but I usually end up combining whatever mix of food combos they have set up. For instance today was cucumber tomato salad, 1 cup quinoa, and 1/4 avocado…so I just mixed it all in. It looks messy but tasted really great! Instead of the dressing listed (that was mostly the same ingredients as the greek dressing — I just used what I already had made of that) but here’s the recipe:

Cucumber & Tomato Salad courtesy of the Ultimate Reset

(Makes 1 Serving)

2 Tbsp. red wine vinegar

1 tsp. balsamic vinegar

1 Tbsp. lemon juice

2 tsp. extra-virgin olive oil

1 medium cucumber, partially peeled, cut lengthwise then sliced

1 cup cherry tomatoes, halved

1 Tbsp. red onion, chopped

2 Tbsp fresh herbs (I used parsley & basil), chopped

Himalayan salt to taste (optional)

Herbal seasoning (optional)

Combine red wine & balsamic vinegars, lemon juice, and oil in a small bowl, mix well. Set aside. Combine cucumber, tomatoes, onion, parsley, basil, salt, and seasoning in a large bowl, mix well. Drizzle dressing over cucumber mixture; toss gently.

Wait at least 2 hours (I waited 3)

Take your power greens

Hearty Miso Soup

Hearty Vegetable Miso Soup

makes 1 serving

Ingredients:

• 1 t. extra virgin olive oil or safflower oil

• 2 T. finely chopped yellow onion

• 1 t. finely chopped garlic

• 1 small carrot, cut in thin diagonal slices

• 1 small celery stalk, cut in thin diagonal slices

• ½ t. peeled and finely grated ginger (I omitted – I hate ginger like a lot)

• 2 C. water

• ¼ C. broccoli florets

• 2 T. chopped fresh green beans (I only had asparagus)

• ¼ C. shredded Napa cabbage or bok choy

• 1 T. wakame seaweed (optional…It makes me hate life so I don’t add this either haha)

• ¼ t. sesame oil

• 1 T. sliced green onion

• 1 T. miso paste mixed with 2 T. hot water (also optional)

Directions:

1. Heat EVOO in soup pot on medium heat.

2. Add onion, garlic, ginger, carrot, and celery and saute for 5 minutes.

3. Add water and simmer on low for 20 minutes until veggies are tender.

4. Add broccoli, beans, cabbage, and seaweed.

5. Stir and simmer until tender but not overcooked; broccoli and beans should remain crisp.

6. Remove from heat and add sesame oil, green onion, and miso mixture.

1/4 cup quinoa & lemon greens (greens sautéed in extra virgin olive oil & squeeze of lemon)

Finished off the night with chocolate Teeccino in place of coffee or a cheat and I have to say it makes giving up coffee for good a breeze!!

Dude, I’m so ready to be laser beam focused on my goals to lean out before my 2 rounds of 21 Day Fix Extreme  in prep for 80 Day Obsession!!!!

I was OVER quinoa-lentil salad & broccoli so I opted for a yam in its place from the “Reset in a crunch” menu!

I was struggling a little so I had a bowl of pears and blueberries for “dessert”..normally the family makes cookies, s’mores, popcorn, brownies, or something on our Friday movie night and I will say that even though they enjoyed cookies and tater tot nachos I made I through with the fruit and this no caf teeccino! The Skinny on the Ultimate Reset – Day 8

In any given moment we have ✌🏼options.

1. We can take a step forward into growth

2. Retreat and step back into safety.

Gut reaction is to to resist. Change is uncomfortaballs!!! You can try to play cool and like you have it together but inside you’re in a constant state of QUIT & RUN!! Grasping at straws to keep it all together or to blow it all off.

My journey has been FILLED with blowing it off. I could list a laundry list of reasons and place blame! 3 pregnancies and getting older for my weight gain… bad genetics or our lack of money just to name a few.

Instead I refused to give up and started taking matters into my own hands. 💯💯

Everyday I whether I SLAY THE DAY OR FAIL FORWARD I know I’m doing what I can to be the best version of ME!

As much as we don’t like to switch things up! Sometimes it is what is best for us!!

Over the past 4 years I have:

1. Done Insanity, P90X3, Turbofire, T25, PiYo, Insanity Max30, 21 Day Fix and fix Extreme, Country Heat, Hammer && Chisel, Core de force, 22 Minute Hard Corps, Shift Shop.

2. I have eaten clean, followed portion fix, followed countdown to competition, 3 Day Refresh, and TREAT YO’SELF😭😂. ⁉️ Each program taught me something I didn’t know about myself and helped me level up to the next phase of my fitness. Whether it was leaning out, building muscle, overcoming eating disorders, pushing through breaking points, or just learning to create consistency.

During this process what has always remained the same is– food is fuel– create a lifestyle — take care of yourself!! Which brings on the BIGGEST NUTRITIONAL CHALLENGE YET!! 21 days of TIMED && PRECISE meals, nutrition and detox supplements, and yoga.

I have never been more ready for this program. Everything that I have done with Beachbody has helped me grow into the girl that could commit to something like this and already 7 days in I am so much better for it!!

Basic Vinaigrette

‎1/2 Cup Extra Virgin Olive Oil

1/4 Cup Red Wine Vinegar

1 tsp salt Himalayan Salt

1 tsp raw honey

2 Tbsp Fresh Lemon Juice

2 tsp chopped fresh herbs (I used basil & parsley)

CREAMY GARLIC 🥗 DRESSING

1/2 cup extra-virgin olive oil
1/4 cup apple cider vinegar
3 cloves garlic, crushed
3 Tbsp. fresh lemon juice
2 Tbsp. chopped fresh parsley
1 tsp. Himalayan salt
1/2 tsp. Dijon mustard
1 Tbsp. raw honey (or pure maple syrup)
Place oil, vinegar, garlic, lemon juice, parsley, salt, mustard, honey in a blender until smooth. Refrigerate dressing to store. If dressing solidifies when cold, hold at room temperature for 30 minutes. Stir or shake before serving.

The Skinny on the Ultimate Reset – Day 3

Googling “how to get through the weekend without cocktails”


Today was the first day I’ve smelled coffee since Saturday (6 days ago) and it smelled like heaven. I kept saying “one sip wouldn’t hurt” as Tom was brewing my favorite Starbucks Willow Blonde Roast blend.

And seriously contemplated how one little piece of Halloween candy couldn’t possibly hurt, right?!? Ugh haha. I made it through every possible bad decision feeling good and being at the top of my game! I’m honestly so freaking proud of myself. I don’t know where the motivation is coming from other than I’ve put my whole heart into doing this Ultimate Reset for myself. Something to help me get beyond the sabotage I do every time I start to see results. A set of meals I can come back to and remember how strong I was and how I was capable of achieving what I never thought I would. I feel like I just heard the Rocky theme song in my head.

So the here’s how Day 3 went down:

Bomb ass Lentil-Lime Salad

1 cup cooked green or brown lentils

1 medium carrot, shredded

1/4 cup finely chopped cilantro (I subbed italian parsley)

1 1/2 tsp sesame oil

2 Tbsp fresh lime juice (I used 2 whole limes bc I loooove lime)

Braggs liquid aminos

Himaylayn salt

1/2 tsp cumin (optional – I didn’t do it)

Herbal seasoning (also didn’t add it – I’ve noticed spices a lot more I think as my tastebuds actually get clear and I am realizing I don’t really like things like cumin or cilantro!? And the only herb seasoning I have has both LOL)

Combine it all in a bowl, mix, and cover. Marinate in the fridge for a couple hours before serving.

K full disclosure I messed up royally on dinner. I was supposed to make Nori rolls with Tempeh and at lunchtime when I realized my tempeh was rotten (ugh thanks Lassens) that’s when I ran to Target and was going to stop at Lassens to return the tempeh for a new package I realized I forgot the tempeh on the counter. Then I was just gonna roll the veggies and rice and I was over it. So I ate a leftover bowl of the beans and rice with corn from last night and veggie broth. I still feel good about my choice and know that there is no way I can be totally perfect. Mess ups are gonna happen and I’m just gonna roll with it with grace and patience with myself.

That’s when I remembered I haven’t been wearing my Ultimate Reset bracelet this WHOLE 3 days so I threw it on like a warrior princess.. or maybe more like a hippie idk hahaha but made it an anklet like it’s keeping me grounded to this plan. I can do hard things. And it reminded me of that.


​I was feeling SUUUUPER achy so I took a hot bath and right then I’m reading in my guide:

What’s even super odd is that I usually take blazing hot showers and baths AND on top of being cold allllll day I didn’t even make the bath that hot. Super weird, right!? I added epsom salt and 4 drops of lavender oil to my bath and it was heaven!!

Got out and chilled with my bear cub on the couch watching old movies! Charlie and the Chocolate Factory & E.T. (my ALLL time fave movie growing up I was OBSESSED with E.T. like had the dolls, blankets, buttons, notebooks, figurines, alllll of IT!)

Oh! And I had half a scoop of vegan chocolate shako to make me feel like I was part of movie night and it made my cub want his daily dose of sunshine too!! I linked them both there if you want to read up on them and see why it’s so important to me that we fuel our bodies DAILY with this stuff!!

The Skinny on the Ultimate Reset – Day 4

The hardest day yet. And I cheated a little. But I’m not even mad about it. Here’s why.


It was an extra serving of fruit when I could have had wine or chocolate cake instead.

Not gonna beat around the bush. I was moments away from a cheat allllll day. Cinnamon rolls. Coffee. Toast. Sushi. Spaghetti. Even cereal was tempting me. I wanted to shove anything I could into my face to drown out the feeling of deprivation. But here’s the dumb part. It’s me having my own temper tantrum. There’s so much dang food I can’t even finish most of it in one sitting!! And if I wasn’t such a bad prepper this week and had the foods ready to go it wouldn’t even be this hard. It’s because while I’m assembling a dish of all veggies I’m having to make spaghetti for the kids and it’s torture.
Tom was supposed to be in charge of all the food for the family but got the chance to take our oldest to see a show in Vegas so while he’s gone I’m left to my own survival feeding the babes and trying not to sacrifice my results by cheating.

If you don’t have support at home to get through this it will be much harder to make it the full 21 days if I’m being full disclosure. I thought Tom would help kind of distract from things I can’t have but so far he just grabs a beer and drinks it right in front of me or starts brewing coffee and asks me if I want any. Very very hard when I’m trying to get through this without cheating. And 4 days into 21 I think is my breaking point. The 4.8 weight loss my first day helped me truck through day 2 & 3 but now as I’m sitting with a bloated belly and a little constipation I’m less like a force to be wreckoned with and more like a wet absorbent sponge.

Breakfast!

Fresh fruit plate with yogurt. Use whatever fruit is seasonal and fresh in your area (for example: 1 cup mixed berries, 1 kiwifruit, 1/2 cup sliced peaches, 1/2 cup cubed honeydew melon) and 3/4 cup organic plain yogurt sweetened with 1/2 tsp pure maple syrup or a pinch of stevia.

Wait at least 2 hours. (I waited 3)

Lunch – again I improvised this meal. I really have no intention of going to the trouble to make sushi rolls that don’t taste like a California roll or Crunch roll LOL.

Bomb ass Lentil-Lime Salad

1 cup cooked green or brown lentils

1/4 cup finely chopped cilantro (I subbed italian parsley)

1 1/2 tsp sesame oil

2 Tbsp fresh lime juice (I used 2 whole limes bc I loooove lime)

Optional Snack- I made a baggie of jicama, cherry tomatoes, cucumber, and red bell pepper. Usually at a football game I’m eating cheez-its, sunflower seeds, and drinking a wine spritzer so this was a BIG change for me and the mental game was rough seeing everyone else enjoying all of the above. Not to mention I let little man have McDonalds today…I don’t even like McD’s but just the thought of some fattening salt laden fries and a diet coke seems soooo comforting. I just kept drinking my mineralized water and telling myself I need this. I need the mental clarity. I need the detox. I need the help pushing through my emotional eating.

Dinner – another modification because I didn’t prep what needed to be ready. The meal called for stir-fried veggies, cucumber and tomato salad, 3/4 cup quinoa, and 1 serving of Nori Gomasio. None of which I had ready to make so I substituted with another veggie bowl like I had for lunch, 3/4 cup brown rice, and a cup of organic veggie broth with green onions.

I am positive we are supposed to eat exactly to plan and I don’t intend to flub through the rest of this. I love being ready and feeling like I’m following along like I’m supposed to so that I get true results from this program. I’ve been in a shit mood and I always tend to sabotage myself when I don’t plan ahead. So today I’m dedicating the time in the kitchen to have everything ready ahead of time that I need!

The Skinny on the Ultimate Reset – Day 2

You guys. This doesn’t seem real and I’m not trying to create hype. But I am down 4.8 freaking pounds SINCE TUESDAY!?! Whhhaaatttt!!? K so now the real deal I have been eating and drinking like CRAP for the past month or more, right. I fell back into so super sad eating habits where I’m using food to self-medicate and it’s NOT healthy. I knew that so it’s why I started this 21 days into resetting my body and my mind.

I didn’t come into this expecting to lose a ton of weight and it’s not at all why I’m doing this but if I could see the other side of 130s I would be soooooo stoked!! 130 is my new 120 after adding on a shit ton of muscle the last 1.5 years using some of our crazy amazing programs!

This weight loss is the accumulation of detoxing the bloat and misery that comes from eating too many cheats and lets me honest just not tracking my food at all and at any moment if I felt like eating nachos I’d make a huge plate and eat them while binging on Riverdale episodes. (Oh em gee are you watching it!!? It feels so weird like it’s the comic strip behind the scenes. They should have called it Archie Exposed hahahaha)

Anywho. You guys know I divulge everything and while I was working out I just wasn’t taking care of the nutrition side of myself for the last month or so. And those old habits come back HARD when you aren’t paying attention. Food has always been a comfort to me so when I’m struggling or having emotional issues I find solace in that bag of cheezits. But just like any toxic relationship it HAD to end and I know it’s only day 2 but I feel like a freaking rockstar!!!!

My girls in our group are killing it and I’m just like why did I wait so long to do this program!! It’s like P90X for your insides!!!

I’m not even gonna lie I have not been wanting to work out lately so the fact that they only recommend light stretching or yoga was a huge bonus to me for the next three weeks!

I promise to share more than just food pics for the next 21 days but seriously LOOK at this huge bowl of oats and yogurt with blueberries. It’s one of my favorite breakfasts but I wouldn’t normally even eat this much in one sitting and I’m still staring at half the bowl like “am I gonna try to eat that!?” #somuchfood And I loved loved loved dinner!

Here’s the day 2 detox breakdown:

Wake up w/20 oz of distilled water (Mineralize added) and continue drinking this ALL day just not until 30 mins after a meal for digestion purposes!

Take Supplements (Optimize)

Wait 30 Minutes

Breakfast!

1/2 cup rolled oats

1 pinch Himalayan salt

1 cup fresh blueberries

1/2 cup plain organic yogurt

1 tsp. pure maple syrup

It called for them as two separate dishes but I love yogurt in my oats so I put it all together. And the thought of just plain yogurt with a tsp of syrup didn’t sound good. It called for a pinch of stevia if you wanted.

Wait at least 2 hours. (I waited 3)

Take Supplements again – I missed this alarm because I was bringing food to M at school so I have to wait and take them tonight before bedtime (as directed in the guide)

Wait 30 min

Lunch!

It called for a greek salad with chicken & greek dressing but I had already prepped a few microgreen salads with the basic vinaigrette and I had salmon leftover so I put it all together for lunch.

Microgreen Salad with Homemade dressing

Salad consisted of:

A boat load of spring mix

1/4 C carrot

1/4 C cucumber

1/4 C red bell pepper

1/4 C sprouts

1/4 C tomatoes

1/4 C chopped jicama

1/3 C pine nuts

Basic Vinaigrette

‎1/2 Cup Extra Virgin Olive Oil

1/4 Cup Red Wine Vinegar

1 tsp salt Himalayan Salt

1 tsp raw honey

2 Tbsp Fresh Lemon Juice

2 tsp chopped fresh herbs (I used basil & parsley)

Wait at least 2 hours (I waited 3)
Take your power greens (tastes like wheat grass)

Wait 30 Minutes

Optional Snack – 1 1/2 cup veggies & 1/4 cup hummus

Wait 2 hours

Take Supplements (Optimize & Soothe)

Wait 30 min

Shako!! My favorite shake is not part of the plan until week 3 but honestly it helps me get through the day and with all this damn Halloween candy around I HAD to have my shake!! I intend to keep it in the plan everyday if at least 1/2 scoop worth.

Wait 30 mins to 1 hour

Dinner!

This was freaking bomb! I didn’t even miss having the meat! Which I still can’t believe!

Southwest Veggie Taco

1/2 cup black beans

1/2 tsp. extra virgin olive oil

1 dash ground chili powder

1 pinch ground cumin

1/4 tsp ground coriander

1 tsp Bragg Liquid Aminos

Himalayan salt to taste

3/4 cup brown rice

1/4 medium avocado

1/4 cup cooked corn kernels

1 (6-inch) corn tortilla

2 Tbsp pico de gallo

Combine mix and assemble into your tortilla and top with avocado and pico de gallo.

Sooooo delicious and even my kids liked it!!

It says to rest when you feel like you need to so I took an Epsom salt/essential oils bath then napped for a couple hours today. I intended to do the yoga portion of my workout but honestly just kinda stretched on my mat. Which is totally allowed. I just finished up shark week and feel extra tired so I’m just listenting to my body and doing what feels good.
If you’ve tried everything else like me or maybe you just want to feel more energy we should be talking about this! I have a wave of babes starting Monday and then your next chance is with another round right after Thanksgiving! Because idk but I want to feel good coming into Christmas like yah baby! I did this during the hardest time of the year and won’t even be sweating any New Years resolutions!!
